PANCAKES
Pancakes are always a crowd pleaser. Easy to prepare and quick to cook. Make them plain and add toppings, or mix it up with some bananas, blueberries or honey and cinnamon. Some people even like to make the batter before they leave home so it’s ready to pour.
Here’s a basic pancake recipe to get you started.
BREAKFAST BURRITO
A breakfast burrito is worth waking up for and a fun alternative to the good old bacon and egg roll. And you can basically add in anything you have already at your camp site. Sausage, potatoes, eggs, veggies, black beans, tomatoes and cheese. Wrapped in a tortilla (toasted or fresh). The breakfast burrito works great as a vegan/vegetarian meal too.
WRAPS
You can’t go wrong with a wrap. Use vegies/salad you have on hand and add in any left-over meat from dinner the night before. Wraps are a good family meal, where everyone can pick and choose what they want. Meals while camping is all about making it easy (and delicious).
SALAD BOWL
A Summer favourite and quick and easy to make on the go. Be as adventurous or basic as you like. As with the wraps, add in anything you have on hand. Make a large bowl up and save the rest for dinner (or lunch the next day).
FISH TACOS
Nothing says Summer camping like fish tacos – hopefully with freshly caught fish! Use what you have left over from your salad lunch and make a sauce with some sour cream, mayo, lime juice and a splash of Sriracha.
